Vegan Tacos

This is my version of vegan tacos, combining tasty spiced taco “meat” with a spicy salsa and creamy guacamole.

You’ll need the following (this will make enough for 10 tacos);

One pack of 10 soft corn tortillas

For the salsa you’ll need;

  1. Three tomatoes, diced
  2.  Half a red onion, diced
  3.  Two tablespoons finely chopped fresh coriander
  4.  The juice of half a lime
  5.  ½ teaspoon of cayenne pepper
  6.  Salt and pepper to taste

Combine the ingredients and mix well.

For the guacamole you’ll need;

  1. Two avocados
  2. ½  red onion, diced
  3. One tablespoon of finely chopped fresh coriander
  4. The juice of half a lime
  5. Salt and pepper to taste

Mash the avocados and mix in the rest of the ingredients.

For the taco “Meat” you’ll need;

  1. One 380g pack of Fry’s meat free mince (You can use any other meat free mince product, or use a mixture of beans instead.)
  2. One teaspoon of oil
  3. Two cloves of garlic, minced
  4. ¼ red onion
  5. Spice mixture, comprising of; One tablespoon of smoked paprika, one teaspoon of cumin, one teaspoon coriander, ½ a teaspoon of cayenne pepper, ½ teaspoon of salt
  6. One tablespoon plain flour
  7. 200ml vegetable stock

You’ll also need lettuce, you could also add in vegan cheese and vegan sour cream but I didn’t have any to hand.

Method;

I prepared the salsa and guacamole first, and then left them to chill in the fridge.

Then I made the taco “meat” mixture by heating a teaspoon of oil over a medium heat, and frying the garlic for about a minute before adding the onion and frying for a further 10 minutes or until soft. I then added the Fry’s mince, spices and flour and cooked them for about another two minutes.

I then added the hot vegetable stock and continued cooking for about ten minutes to thicken the mixture.  I heated the tortillas in the microwave for about 30 seconds and then proceeded to assemble the tacos. (I initially forgot to include the lettuce so I added it in after I took the picture, so just pretend there’s lettuce in there too.)

I thought these tacos were lovely as they were, but you could easily use shop bought salsa and guacamole to make things easier, or use beans instead of meat free mince if you prefer to. As always you can make any changes to suit your own personal tastes.
