This is a tasty option instead of a more traditional burger patty and you only need very few ingredients. You can make your own pesto or use shop bought if you prefer, if you want to make your own, check out my spinach pesto recipe here
- Two rolls
- Two flat field mushrooms, washed, peeled, with the stalks removed
- Vegan cheese (optional)
I didn’t fry the mushrooms in any oil but you can if you prefer. Fry the mushrooms gill side down for a few minutes over a medium heat, until they start to release liquid.
Turn over the mushrooms and spread pesto over them, carry on cooking for another few minutes until they become soft.
Add the vegan cheese on a minute before you’re ready to serve, just to give the cheese a chance to melt.
Serve in warmed rolls with slices of tomato and spinach leaves. This is such a simple burger recipe that you can make in only a few minutes.
