Vegan Rocky Road 

I recently received lots of various vegan goodies and amongst them was a packet of strawberry flavoured marshmallows, I wanted to make something with it and came up with this vegan rocky road. This is what I used;

Yield; Eight

  1. 180g dark chocolate
  2. 50g rich tea biscuits, crumbled
  3. 50g nuts
  4. 75g vegan marshmallows

Melt the chocolate in a bowl over a saucepan of water, you don’t want the water to be too hot so a medium heat should be adequate. Keep back a few squares of chocolate, you’ll need it later. Once the chocolate has melted add in the few squares that you set aside earlier, this will bring the temperature of the chocolate down and make sure it’s tempered properly.

Then add in the other ingredients and mix well. You want to crumble the biscuits but you don’t want to completely render them to dust, so don’t get too carried away. I saved half of the nuts to put on the top as decoration, but you don’t have to. Also I felt the marshmallows were a little too big so I halved them before mixing them in.

Leave in the fridge for a couple of hours to set before slicing, it’s super simple.
