“Beef” and Vegetable Kebabs

Marinated “beef” style strips, green pepper, red onion and mushroom kebabs. Another recipe perfect for barbecue cooking, or you can grill them instead. I used Fry’s chunky style strips, which are very flavourful as they are, but I marinated them to add even more flavour.

Yield; Five kebabs Cook time; Ten minutes

You’ll need;

  1. 150g/5oz Fry’s chunky style strips (any mock meat will work though)
  2. Half a large green pepper, cut into chunks
  3. Half a large red onion, cut into chunks
  4. Five small white mushrooms cut into chunks

For the marinade you’ll need the following;

  1. Three tablespoons of ketchup
  2. One tablespoon of malt vinegar
  3. One tablespoon of oil
  4. One tablespoon of soy sauce
  5. One teaspoon of dried thyme and dried oregano
  6. One teaspoon of wholegrain mustard

Method;

  • Defrost the Fry’s strips, or whatever mock meat you’re using.
  • Whisk together the marinade ingredients in a dish large enough to put the mock meat into. Mix the mock meat through the marinade and leave in the fridge to marinate for at least 30 minutes.
  • Remember that if you’re using bamboo skewers, soak them in warm water for a minimum of 30 minutes before using them, this way they won’t burn while cooking.
  • Once you’re ready to cook, heat either a grill pan or barbecue to a medium high heat.
  • While that’s heating up, thread the vegetables and “beef” pieces onto skewers. Watch your fingers, accidentally stabbing yourself is not fun.
  • Cook for ten minutes, turning once halfway through.

These would be perfect served along side vegan burgers and vegan hot dogs. They would also be an ideal partner for the grilled veggies and lemon and herb couscous. Check out that recipe HERE
