Creamy Asparagus Pasta

While staying with my Mom,  I had a fruitful forage in a garden centre near her house. I bought this funky capricci pasta, sauce sticks well to the cooked pasta due to it’s shape. I also found vegan chocolate covered peanuts and raisins, I love finding vegan treasures.

Yield; Three servings Cook time; 30 minutes

You’ll need;

  1. 40g/1.5oz plain flour
  2. 40g/1.5oz vegan margarine
  3. 250ml unsweetened non-dairy milk
  4. 200g/7oz asparagus
  5. One large brown onion, minced
  6. Two large cloves of garlic, minced
  7. 100ml single non-dairy cream
  8. 225g/8oz dried pasta

Method; 

  1. Firstly, work on the sauce. Melt the vitalite in a small saucepan over a medium heat. Once it’s fully melted, add the flour and stir well to combine.
  2. Heat the non-dairy milk for a couple of minutes in a microwave (or use the hob if you prefer) It just needs to be warm, not hot. After the flour and margarine has been cooking for about three minutes, add the warm non-dairy milk a little at time.
  3. Once you’ve used all the milk you should be left with a thick, creamy bechamel sauce. At this point, set the sauce aside.
  4. In another saucepan, fill with water and heat on high until it boils. Add the asparagus and cook for four minutes. Once it’s cooked, drain the asparagus before running some cold water over it to stop the cooking process. Drain again then set aside.
  5. In a frying pan over a medium heat, add a little oil and fry the garlic for one minute. Then add the onion and cook for about ten minutes, or until it softens.
  6. At the same time as you’re cooking the onion, boil the pasta as per the instructions on the packet. Once it’s cooked, drain and set aside.
  7. Now we just need to assemble the dish. In the frying pan containing the onion and garlic, pour the sauce, cream, asparagus and pasta. Mix until well combined and allow for everything to warm through, this should take about five minutes or so. Serve immediately.

Tip; For the milk and cream I used Alpro. Their unsweetened soy milk is perfect for savoury dishes, and the taste of their soy single cream is spot on. You can find these products in most “Free From” sections of supermarkets.
